With a few South Beach friendly crockpot recipes in my collection, I’ve been able to almost forget I’m on a low glycemic diet. All day long, I eat countless snacks of nuts, celery sticks, and mozzarella cheese. But when it’s dinnertime, I can once again enjoy those delicious and savory aromas of a slow cooked dinner simmering in my crockpot.
Who says being on a diet has to be tasteless, boring, or limiting? Let’s look at a couple wonderfully tasty recipes that are diet-friendly and delicious at the same time. By the way, no one in the family needs to know these are low glycemic dishes. They won’t even know they’re eating diet food. Enjoy!
Ginger Beef and Snow Peas
You’ll need about a 2 1/2 lb. boneless Round Steak, cut into 4 pieces. Place the pieces in your crock pot. In a separate bowl, whisk together 1 cup of soy sauce, about 2 teaspoons freshly grated ginger, 2 cloves of garlic, grated or minced, and 2 tablespoons canola oil. Pour your mixture over the steak and put on the crockpot cover. Cook this on low for about 6 hours. Give the meat the fork-test to see if it’s nice and tender. If not, let it go a bit longer. Then serve alongside hot, cooked snow peas tossed with sauted mushrooms for a perfectly delicious Asian inspired meal that’s delicious, filling, and low glycemic.
Simple Split Pea Soup
To create a classic split pea soup, put a 1 pound bag of split peas into your crockpot along with 2 pounds of boiled ham, diced up, 3 cloves garlic, minced or grated, 1 medium onion, diced, 3 ribs celery, finely diced, a dash of black pepper, 7 cups fresh cold water, and 5 chicken bouillon cubes. Cook on low heat for 6 to 7 hours. Quickly lift the lid on this a couple times during cooking and give it a stir. Otherwise the peas will sink to the bottom and not get as smooth. I say quickly so that you don’t let out too much heat as it takes a long time for a crockpot to recover.
Triple Bean and Beef Chili
Brown 2 pounds of lean ground beef, and drain any excess fat. While the meat is browning, dice 2 medium size onions, 1 green pepper, and 2 ribs of celery and throw it all into the crock pot. Grate 3 cloves of garlic on top of the vegetables. Pour in 2 cans of diced tomatoes, 1 can of garbanzo beans, 1 can of butter beans, and 2 cans of kidney beans, all drained first but not rinsed. Then add a 15 ounce can of chicken broth, 3 teaspoons chili powder (or more if you’re an adventurous eater), 1/2 teaspoon of ground cumin, 1 teaspoon of black pepper, and 1 teaspoon of salt. You may want a bit more salt, so taste the mix later as it cooks. Now, add the browned ground beef, stir up a little, cover the crockpot and let cook on low for about 6 hours. I serve this in big bowls with a dollop of low fat yogurt and a sprinkle of chives. You can garnish with whatever your diet allows.
Having a few delicious South Beach friendly crockpot recipes on hand makes it much easier to figure out meals to cook that follow the rules of a low glycemic diet. I can nibble on snacks of celery and peanut butter happily during the day if I have a hearty meal waiting for me at home. I’m happier and my family is happier, too, now that they aren’t looking at salads and chicken seven days a week. Eating well and staying on my diet… my crockpot has once again come to the rescue!
